Plant Based Blueberry Cake

Consumers are looking for tasty and nutritious plant-based options that do not compromise on quality or indulgence. Our Blueberry layered cake is a perfect example of this. It is made with our Satin Vegan Cake mix, layers of juicy blueberries made with our high-fruit-percentage Topfil Plus Blueberry, and decorated with our Ambiante non-dairy whippable topping. This beautiful cake is finished off with our Miroir glaze.

Plant Base Cake

Combine ingredients in a mixing bowl fitted with a paddle attachment.

Mix for 1 minute on slow and 4 minutes on medium speed.

Scrape down halfway through mixing.

Scale at 550g batter into 3x8” pans lined with parchment and bake for about 40 minutes at 165°C / 330°F.

Unmold and allow to cool completely.

Blueberry Mousse

Whip Ambiante at medium speed for approximately 5 minutes.

Blend Topfil Gourmet Blueberry until smooth.

Incorporate Topfil Gourmet Blueberry by folding into whipped Ambiante.

Fill a piping bag fitted with a star tip and set aside.

Blueberry Glaze

Blend Topfil Gourmet Blueberry filling with an emulsion blender and mix with Miroir.

Assembling

Trim top of the 3 cake layers.

Place one layer of the cake on a cake board and spread a thin layer of blueberry mousse.

Pipe a border of the prepared Ambiante cream around the perimeter of the cake.

Fill the center with the blueberry filling.

Top with a second cake layer and repeat once more, finishing with the third cake layer.

Frost the cake with whipped Ambiante.

Decorate the edges of the cake with blueberry mousse and spread a thin layer of the blueberry miroir glaze in the center.

Decorate with fresh blueberries as needed.
