Mini Vegan Almond Matcha Muffins

Matcha powder 8 g
Almond extract As needed
Almond milk 470 g
Oil 220 g

Working Method:

  • Place the ingredients in the mixing bowl and blend together for 1 minute on low speed using the paddle attachment
  • Scrape down bowl and mix for an additional 4 minutes on medium speed
  • Scale: 20 grams each
  • Top with sliced almonds 
  • Bake Temperature: 165-170oC (329-338oF)
  • Bake Time: 15-18 minutes
  • Internal core temperature 99oC (210oF)
