Deli Meringue Pie Verrine

Working Method

Composition and Preparation

1. Batter 

  • Put liquids in a mixing bowl.
  • Add Satin Crème Cake and mix 1 minute on low and 4 minutes on medium speed with the paddle.  Scrape the bottom and sides of mixing bowl and the paddle.
  • Mix 2 minutes on medium speed.
  • Spread 950 grams onto 1 paper lined sheet pan. 
  • Bake for approximately 12 minutes at 360 degrees F in a convection oven.  

2. Key Lime Pie Cream

  • Place Cremfil Silk Key Lime and lime zest in a bowl.
  • Fold in whipped Ambiante followed by whipped dairy cream.
  • Put the prepared cream in a pastry bag until ready to assemble the Verrine.

3. Deli Meringue

  • Whip on 2nd speed for 5-7 minutes.  
  • Place in pastry bag fitted with tip of your choice.


  1. Cut to shape and size needed depending on the verrine used and reserved.
  2. Pipe Cremfil Silk Key Lime  in a verrine followed by piece of Satin Crème Cake and 2nd layer of Cremfil Silk Key Lime 
  3. Decorate with Deli Meringue and with the use of a blow torch caramelize the meringue for a beautiful golden colour.
  4. Add a piece of chocolate décor to the top of meringue for a nice finishing touch.
