Working Method

Oven Type Deck Oven
Oven Temperature Top: 180°C / Bottom: 180°C
Baking Time 20 minutes
Damper Closed
Water Loss 10%
Cake Mix 1 minute slow. Mix 4 minutes Medium.
Scale 600g for 8" round.
Bake at 165°C for about 40 minutes.
Ganache Preparation Melt the ganache till 28°C.
Chocolate Creme Mix cocoa with oil. Add to Ambiante add mix for 4 minutes at medium speed
Decoration

Make chocolate shavings with the Belcolade Selection Noir Cacao-Trace and keep aside.

Whip the cream until it reaches a stiff peak texture.

Application Can be used for thick and thin applications.
Assembling Take a cut-out circle of the cake and pipe a layer (50g) of Chocolate Creme on it. Place a second layer of cake on top and spread a layer (100g) of Belcolade Ganache. Add another layer of cake and cover thecomplete cake with Chocolate Creme. Finish with chocolate shavings and Chocolate Creme.
