A clean label ingredient list focuses on whole-food ingredients that consumers recognize, such as flour, sugar, oils, eggs, milk, fruit, fiber and natural extracts. To replace additives, manufacturers use functional natural ingredients. For example, they may use plant fiber for texture, or enzymes to improve the structure of baked goods. The goal is to achieve the same taste and shelf life using only ingredients that sound familiar.
