Consumers are becoming increasingly aware of the health benefits or risks of the food they consume. We do find ourselves spending a little more time checking the ingredient listing and the nutritional information before making a final purchase decision.

According to a ACNielsen survey in Canada, a majority of respondents indicated that they are aware of and concerned about the health risks surrounding obesity, trans-fatty acids and saturated fat. 

92% of the respondents claimed that they were aware of the health risks associated with obesity, saturated fats (85%) and for trans fatty acids (79%).

The survey also found that concern is translating into behavioral changes, with many people saying they are cutting back on their consumption of fat (56%), sugar (47%), fatty acids (37%), salt/sodium (34%) and carbohydrates 26%).
